The Azienda Agricola Gonny cultivates around five thousand olive plants at Lucignano d’Asso, a small medieval village in the municipality of San Giovanni D’Asso (Siena), close to Montepulciano, Pienza, Montalcino, an area especially suitable for olives and grapes growing. The olive tree has always grown on our hills, and it has become the most entrenched and integral element in our cultivations. The especial flavours and aromas of the extra virgin olive oil of the lands of Siena are the best synthesis of this millenary tradition. In the cultivation of the olive tree, our farm applies the care and dedication of the oldest tradition: from the flowering to the olive harvest, with pruning done by hand, in total respect of the environment, without any use whatsoever of chemical pesticides, and using the rigorous procedures of organic farming.

Depending on the season, the harvest generally begins in October, and the mechanical crushing is carried out rigorously within the following 24 hours. A cold extraction process, carried out at temperatures below 27°C, is used to produce our oils, exalting their characteristics of fragrance and typicity. The olive grove areas are situated at an average elevation of 500 meters a.s.l., and include Leccino,  Correggiolo, Moraiolo, and Pendolino cultivars.
